So then I tried "health food" cookbooks, which were filled with obscure, expensive ingredients. Then I discovered the More-with-Less Cookbook.
This cookbook is about improving nutrition, saving money, and using less of the world's resources. It provides a good variety of recipes from around the world. The recipes use basic ingredients and are easy to follow. "Time-Saving" recipes are noted for busy cooks. (Tip: get the spiral-bound (or "plastic comb") edition.)
